The Four Courses of the Apocalypse

One of the glaring ironies of my life consisted of being pals with food goddesses Julia Child and M.F.K. Fisher, and yet not knowing how to make anything other than a peanut butter sandwich. My friends used to tease that, “Leo could burn boiling water if you don’t keep an eye on him.” When I was a kid, my poor mother, who often claimed I was her ticket to sainthood, would prepare the evening meal for my father, my sister, Diane and herself, and a lonely hamburger on a back burner of the stove for me because other than it and the peanut butter and bread, I refused to so much as look at any other kind of food. “This isn’t a restaurant,” my mother would say, but I was willful, wanted my burger and nothing else. So, in later years, it was of particular surprise to many, and especially to me, when I became a private cook to two former members of the Roosevelt administration, Hilda and Francis Shea, their son, Richard, and their live-in staff of 15 to 20 men.

I can boast a little bit now that I am quite the accomplished cook – I whip up a mean jambalaya and can flambé and sauté with the best of ‘em. But I did myself at the time no good throwing the names Fisher and Child around because that made Ms. Shea assume that I, too, knew how to cook. “Oh, Leo. Do you know how to make a Sauce Soubise?” she intoned, summoning up her most aristocratic accent. “Suuuuu-beeeeeze??” I said I did not and reminded her she had hired me to be Richard’s companion/caregiver. It led anyway to the dread question, “Well, did you ever take Chemistry 101 in school?” “Sure,” I said. I was then led by the nose over to shelves heavy with cookbooks of every decade and design, names so dear to me now but which instilled instant quivering in my spine when I first laid eyes on them: some vintage such as Michael Field’s Culinary Classics and Improvisations, and of course, the twin bibles of every serious kitchen: Irma Rombauer’s The Joy of Cooking and Julia’s Mastering the Art of French Cooking, and some quirky, even strange cookbooks such as Cook It Ahead, Live High on Low Fat, John Thorne’s Outlaw Cook, Only Kosher Cooking Matters, The Zodiac Cook Book. Ms. Shea waved her hand à la Vanna White showcasing letters of the alphabet and said, “Well, this is just like Chemistry 101, only with food.” She showed me where the apron was and left me to my folly.

Relaunching of The Rambling Epicure E-zine

I launched The Rambling Epicure e-zine, this website, nearly ten years ago as a literary culinary electronic magazine with a host of well-known food writers and photographers, all of whom are still active members of the related Facebook groups Culinary Travel and Mastering the Art of Food Writing. Editing and publishing this on my own required an incredible amount of gratifying work and because I was busy with my personal projects, I have left it semi-dormant for the last year or two. Today, I would like to relaunch it in a different form as part of an effort to encourage conversation about food, cooking, and writing.

My primary goal is for The Rambling Epicure to become a wellspring of enlightening epicurean essays and culinary fiction. We all have captivating personal and family tales about what we cooked and what we ate through many generations, during good times and bad. These memories are part of our food culture—and our food heritage—and should be an effective way to transmit our experiences and values beyond our front doors.

But my ambitions are greater than just memoir: I’m also interested in publishing articles and essays related to historical research in the field of gastronomy and in reviews of food books.

I would like to make this a cooperative effort that opens the door for us to share our potential as cooks, diners, and writers. Together, we will create a literary culinary site unlike any other, with information and stories that can be passed down to future generations.

BOOK REVIEW: BAKING POWDER WARS

Baking Powder Wars: The Cutthroat Food Fight that Revolutionized Cooking, by Linda Civitello 

If baking powder doesn’t seem substantial enough to merit an entire book, that’s only because its history and background have not been widely explored and remain generally unknown. Linda Civitello’s carefully researched book has finally opened a window onto a fascinating subject and era in U.S. history. The book is interdisciplinary in nature, shedding light on the science and chemistry behind baking powder, the international exchange of ideas and scientific knowledge that enabled the powder’s development, the history of chemical leavening agents, politics and corruption, suspicion of foreigners (in this case, Germans), and insights into the role baking powder played in the economic history of the U.S., as well as marketing, feminism, and social issues. 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

I found especially interesting the book’s exploration of how baking powder revolutionized women’s lives, freeing them from the necessity of spending long hours kneading and baking bread for their families. The popularity of baking powder in the US  also explains how baking styles here developed differently from European baking — U.S. cooks relied much more extensively on a chemical leavening action while more traditional European cooks relied on beating bubbles into the batter and using eggs as a leavening. This difference created new American baked goods such as cookies, quick biscuits, cobblers, and light, fluffy cakes.

Baking Powder Wars provides fascinating insights into a unique American product — insights that will change the way you look at a marvelous invention that we have too long taken for granted.

Book Review: Ingredienti, by Marcella Hazan and Victor Hazan

Marcella Hazan, the “godmother of Italian cooking” and the woman many credit with bringing Italian cuisine to the U.S., died in 2013, leaving behind two years’ worth of handwritten notes in Italian in preparation for Ingredienti. Her lifetime collaborator, Victor Hazan, translated and edited these notes, resulting in what is undoubtedly a classic before its time.

With Marcella Hazan’s cookbooks in my suitcase, I was already “tasting Italy” on my way back from London to my home in France. I had a plan: to use her books to learn how to cook Italian food.

That was nearly twenty years ago. It didn’t take me long to realize that the precious ingredients required were simply not available in provincial France. French supermarkets sold pasta made in France with French flour, not Italian pasta made from grano duro. French tomatoes were watery-tasting, even the canned ones. Mozzarella and Parmigiano-Reggiano were rarities found only in a few exclusive shops in Paris. The French were just starting to get interested in olive oil, although in the Southeast it had long been the fat of choice thanks to its Greek and Roman history.

Disappointment quickly set in. Marcella’s Italian recipes weren’t going to taste of Italy using French ingredients. It is no wonder that she wanted to write Ingredienti. She knew this was a problem when living outside Italy and felt the need to enlighten her readers about how to choose and treat ingredients.

It was only later when I moved to Switzerland, where good-quality Italian ingredients of all kinds — tomatoes, pasta, cheese, fruit — were readily available that I returned to Marcella. From Geneva, it was also easy to travel to Turin to the Slow Food gatherings. During the Terra Madre conference, I’d arrive every morning with a roller suitcase and, over the course of the day, fill it with food to take back to Switzerland.

Later, in my Italian food journey — even when living in Italy — Marcella, and later Victor, became for me household words, their books like a treatise, a bible, that I refer to in times of doubt, for example, when I make “red” spaghettini alle vongole, which I must have made a hundred times using Marcella’s recipe.

As important as this book is, Marcella Hazan’s recipes are not only about ingredients. The true secret to her success is the lucid precision of the explanations. A scientist by training with two doctorates, her instructions are methodical, almost mathematical. She counts in minutes and half minutes, and you can count on what she says. Though her cookbooks were not written as culinary classes per se, once you’ve followed her risotto instructions a couple of times, you are struck by the rigorousness of the recipe, of how each step is in its proper place, and each time given is exact, and it becomes like a work of art or a perfect mathematical equation, with no excess and no frill.

Ingredienti is indeed a testament to Marcella Hazan’s undying commitment not only to Italian cooking, but also to the importance of choosing products and the actual process of shopping, on which we put too little emphasis. Marcella had an intimate relationship with products, knowing them inside and out as if they were the baby she’d raised. “Choose a pepper by its size, shape, and heft. It should be large, heavy, shiny, firm, and cubical in form. The long tapered ones are not as solidly meaty.” Now you have a clear image in your mind of what to look for next time you buy a pepper. The entire book is like this, leaving you with the impression that you’d been going to a market class with Marcella for a week and held the artichokes or peppers or onions in your hands.

Speaking of extra-virgin olive oil, she says, “if olive oil were a drug, it would have a place of honour among miracle drugs,” saying that “it well might be the most significant contribution to my survival.” Although she embraces the use of lard and butter, used in her native Emilia-Romagna, olive oil was the superstar in her kitchen.

On the important subject of pasta: one can’t say fresh pasta is always better than dried pasta. Fresh pasta, made with eggs and flour, longs for butter and cream, which seep into the crevices of its rough surface; dried pasta, made with water and flour, is a perfect marriage for olive-oil and tomato-based sauces, which slide gracefully around it. You’ll never look at pasta the same way once you’ve “consumed” this chapter; in fact, you’ll want to read it over and over, making sure not to miss a single point.

She tells you everything you need to know about Parmigiano-Reggiano, not to be confused with generic parmesan cheese. Its goodness depends on the origin of the milk, the breed of cow, the age, the season, and, of course, the method used to make it. Though this is not a recipe book, Marcella throws in the prize of Victor’s grandmother’s recipe for Parmigiano crostini, not to be missed.

The book is broken down by category of ingredient, including “Produce,” “The Essential Pantry,” and “Salumi,” with individual chapters devoted to classic Italian ingredients such as artichoke, eggplant, and tomatoes; pasta, risotto rice, olive oil, Parmigiano-Reggiano, and red wine vinegar; prosciutto, pancetta, and lardo, and a whole host of other products.

For those who live in locations in the U.S. where Italian ingredients are not available in the same way, just as I did in France, the book includes a fairly exhaustive list of online suppliers of good-quality ingredients with precise indications of what to order from whom.

Count on reading the book from front to cover in one or two sittings, and then keeping it on your kitchen shelf for easy, repeated reference, as you might do with a prayer book. As with all of Marcella and Victor Hazan’s collaborations, there is never an extraneous word, sentence, or idea, so you’ll want to read the important passages numerous times.

Like a yogi, Marcella repeated the same “postures” over and over, meditating upon the ingredients, seeking the truth in them with a focused faith and methodical effort. As a result, Ingredienti reads much like a text written by a spiritual master in old age. It is concrete proof of her dedication; it is the wisdom of years lived in perfect harmony with food, based on her immeasurable knowledge and intimate relationship with ingredients, but also on an almost spiritual reverence for their integrity. It is, indeed, a testament of Marcella and the truth she sought by going to the essence of every foodstuff she touched, and of the truth she attained in her reasoned, scientific manner.

Anthelme Brillat-Savarin, perhaps France’s best-known gastronomic writer, said that the turkey was certainly one of the most beautiful gifts the New World had given to the Old. “…the fattest, and if not the most delicate, at least, the tastiest of all domesticated birds.” It’s not often that the New World gets such compliments from discerning French epicures.

Turkeys were originally called poules d’Inde, “Indian hens,” in France, because they were thought to have come from India, which they later learned was Mexico. The French were not the only ones to get the name wrong. In Hebrew a turkey is a tarnagol hodu, meaning literally  “Indian chicken;”  in Russian indiuk, Polish indyk and Yiddish indik.

There is some controversy over who brought turkeys to Europe. Columbus probably brought  brought them back in the early sixteenth century, since records show that King Ferdinand had ordered that every ship to bring back ten turkeys before the Spanish explorer Cortés set out in 1519. In any case, by 1548, they were the rage in France. In 1549, Catherine de Medicis served 70 “Indian hens” and 7 “Indian roosters” at a banquet held in honor of the Bishop of Paris.

French aristocrats were accustomed to eating all sorts of feathered creatures, including chewy storks, herons, peacocks, swans, cranes and cormorants, so it wasn’t surprising that they fell in love with the less-chewy turkeys, and that in 1570, Charles IX and Elizabeth of Austria thought turkey noble enough to serve at their wedding feast.

By the seventeenth century, the French were raising turkeys as if they were their own and most cookbooks included turkey recipes. French chefs weren’t lacking in ideas: they made stews and ragouts; they larded, roasted and glazed it; they stuffed it and made it into soups and pâtés.

Marie-Antonin Carême preferred the wings, which he deboned, then stuffed with chicken and truffles. Alexander Dumas, in his Dictionary of Cuisine, included 27 recipes. Turkeys were well established in the Hexagon.

Christmas dinners usually meant lots of mouths to feed, so turkey, being the largest of the winged creatures available, eventually became the dish of choice for Christmas feasts. By the nineteenth century, it became customary to stuff the Christmas turkey with chestnuts, and the tradition continues today.

Food blogging is one of the best ways to start food writing, however, and you can hone your skills as you go. You don’t have to be a writer with a deep background to start a blog. Your blog can serve as your developmental playground, while your writing grows in depth, authority, and readerly interest. Many bloggers have a goal of eventually publishing their work in print journals, on high profile sites, as print books, or as ebooks.

You are a food blogger, but your dream is to become a food writer. Writing is a craft, and like all crafts, it takes time and patience to learn. Think of it as a house. You start with a solid foundation, with a frame and a floor, but you have to finish the building so you can house your family.

Working with a writing coach is like adding a roof, insulation and siding to suit the climate you live in. The climate can be compared to the market or the type of writing you aim to do. You have to hone your writing to that market and meet the expectations of publishers and of your audience. Writing free of spelling and grammatical errors is not enough.

Food Blogging 101: 10 Writing Tips for Beginning Food Writers

  1. Write every day, even if it’s just for 10 minutes or to churn out 250 words, even if you have nothing to write about. Being a writer means you write, even when the inspiration is not there. A restaurant chef has to serve dinner to her guests even when she’s just had a fight with her banker. See yourself as a professional and you’re already on the way to becoming one.
  2. Write about things you know. If you don’t know about something, but you’re inspired by it, do your research first. Knowing doesn’t always mean intellectual knowledge. It can also be unique life experiences or things you’ve learned in the school of hard knocks. It can even be about how not to follow a recipe because you’ve learned from your own failures.
  3. Revise and revise, then revise some more. These days it’s easy to number your drafts 1, 2, and 3 or A, B, and C, so you can also recover whole paragraphs or chapters you’ve deleted if you decide you liked previous versions better. Drafts are not children you keep forever; you can play around with them like puzzles. They’re like Humpty Dumpty. You can tear them into little pieces and put them back together again. That’s part of the process. Never be afraid you’re destroying by revising. Think of it as perfecting a work of art.
  4. Cut words, then cut some more. Excess is your worst enemy. There should not be a single word or sentence that is not absolutely necessary to the message you want to get across. Again, consider your writing as you consider your family. Every word is a child and every paragraph a parent. Every element is necessary to the big picture and the message, just as every ingredient is necessary to the success of a great recipe.
  5. Practice great first lines that grab readers’ attention. There’s an art to it. When you read, take note of first lines that strike you. Writing is like theatre in that way. When the play is boring, you nod off to sleep. That’s the last thing you want your reader to do. A recipe by the name of Lemon Chicken isn’t half as appealing as Chicken filet au citron, even if it means the same thing.
  6. Writing is not just words. Writers have to paint a picture in their readers’ minds. As you observe the world, in your mind, start using words to paint pictures to tell your readers about later. Flour is often called white, but it comes in many colors: bleached white, off-white, yellowish, white with brown specks, etc.
  7. Don’t be a perfectionist. All first drafts are pretty bad and we have to accept that. We learn as we go, just like everything in life. Perfectionism can give you writer’s block. Accept your writing for what it is. Love and nurture it until it’s good. Care for it patiently, watering it like you do your flowers, until it grows tall and strong.
  8. Practice flow. Put your hands on the keyboard and let it rip. You can polish it later. Just write and don’t let your brain get in the way. We talk about free association. Practice free writing and write quickly. That can even mean making lists of ideas or words and putting them together later. Free writing touches more on your creative self than on your left brain. When you don’t have time to shop for food, you go to the fridge and think up a meal using what you have. Writing can be the same way. You can connect the dots later if your central idea is not yet clear.
  9. Develop a thick skin. Join a writing group and get feedback. Take writing classes and get more feedback. Be dedicated to your mission of becoming a food writer and use criticism as a tool to improve it and a way of understanding how readers will react. Take it gracefully and then think about it.If you develop recipes, share them with your friends and listen carefully to every comment they have. They are probably the kind of people who will be buying your books and reading your articles. Feedback isn’t always right either, but it makes you think about your craft. Your recipes don’t always turn out right, so don’t expect better from your writing.
  10. Read and read a lot; read good writing, not bad. Read the kind of things you’d like to write yourself. If you want to write a recipe book, read recipe books. If you want to write a food memoir, read every one you can get your hands on. Read books about writing. What you read affects your own writing. Never forget that. Reading feeds your imagination by letting you step into other writers’ minds and observe their skills. You learn to cook better when you follow the recipes of accomplished cooks. Writing is no different.
