Rosa’s Musings: Beet Salad with Cottage Cheese & Soft-boiled Egg

Some people are not afraid of the cold and others regard it with utter contempt. Even though I can’t say I savor every season or mid-season of the year, I nonetheless definitely prefer the fresher season as I hate sweating excessively or getting sunburned like a shrimp on a barbie.

Sometimes I wonder if those predispositions are linked to my DNA or whether is it just a personal preference. What if our genes influenced our manner of conducting ourselves and our traits of character? Hmmm, that is quite a difficult question to answer, but I believe that if our health can be defined by our bloodline, then there are chances that our emotions, temperament and identity are also outlined by it.

You see, my father’s ancestors were Swiss mountaineers who might have had Danish or English origins (my family name is NOT Swiss at all). Then, on my my mother’s side they came from the rugged areas of Northern England where Viking settlers made themselves at home and also from European Russia, a place which is known for its dreadful cold.

When first married, I received lots of advice on how to stay married, which is of course so much more complicated than “getting” married. For example, Sally told me that both a happy marriage and a career had been possible for her because she created and froze 4 quiches at a time.  I immediately pictured 4 quiches in the deep-freeze, carefully labeled for rotation of the stock so as to avoid freezer-burn and waste. The quiches would keep.

Backyard hens are an integral part of our sustainability efforts here at Middleground Farm. I feed ‘the girls’ wild greens, table scraps and essential nutrient-rich gruel; in return they give us incredibly healthy eggs. Our free-range flock reduces the property’s bug population and we protect them from chicken predators. It’s a beautiful relationship, and one that blesses us all.

Perhaps you’ve heard that happy hens lay eggs. While flock contentment is relatively easy to attain (simply provide food, water, shade, soil to scratch, safe spaces in which to lay eggs, roost and roam), I am here to tell you that there is a poultry discontent beyond human control.

Some hens are better layers than others and will vigorously produce eggs come what may. Others find it too taxing to lay when the mercury rises above 92° F or falls below 32° F. A few breeds lay through the molt and when days are short, but many do not. Nearly every mature hen will lay eggs in abundance during spring, so productive are they then your refrigerator may become overrun by eggs.
