Switzerland: Raphael of Fribourg making Fribourg-style Swiss fondue using cheese he makes

Fribourg-style Swiss fondue is referred to as moitié-moitié. Unlike fondues from other regions, it is made with a hard, cooked cheese native to Fribourg, known as Vacherin Fribourgeois (not to be confused with Vacherin or Mont d’Or). The recipe calls for half Vacherin Fribourgeois and half Swiss Gruyère.

In this photo, Raphael is making fondue using the handmade cheeses he makes himself, at the Slow Food Switzerland stand at the Salone del Gusto in Turin, Italy last week. The visitors ran to his stand every time he put a new pot of fondue out. Obviously, it was very good!

Day of the Un-Dead

The Day of the Dead and Halloween are nearly upon us and I am frantically digging for recipes that can protect the living against the Un-dead. Books and papers fly as I paw through shelves and piles, seeking something to ward off the Zombies, Vampires and Werewolves that may be lurking outside the door, or that may invade my kitchen at any moment. They all have highly specialized dentition designed to make swift work of the main course – me!

I’m calling on restaurateurs —  please, this time of the year, an amuse-bouche for the living might be just the thing to calm the customer’s nerves. Could chefs please get a little creative, and instead of offering me a puddle of olive oil, or herbed olive oil, or olives in a lake of olive oil with obligatory bread (that I don’t eat anyway), could they provide something that will protect our table from monsters? Let’s get our priorities straight please; safety comes first!

Switzerland: Take a Gourmet Walk in the Vineyards of Mont-sur-Rolle

Discover the various wine grape varieties and wines of Mont-sur-Rolle at the Caveau de Mont-sur-Rolle on September 1st, 2012. This is a great introductory wine course to Vaud wine.

The walk makes for a lovely daytime family outing. The 5-kilometer walk through the vineyards includes 9 stops at different grand cru wineries. Wine tastings are given by the actual wine maker, with explanations about the method and technique used. It is an easy walk, so children can even come along. The discovery tour starts every 15 minutes, from 10:30 a.m. to 2:00 p.m.

 

 

 

 

 

 

 

 

If you’d like to reserve a traditional Swiss dinner and make it a gourmet walk, you must reserve ahead. Adults 60 CHF, children 25 CHF.
