Spontaneous Cuisine: A Swiss Recipe

When the days are hot and sultry, few things can be as refreshing as a cold cucumber salad, especially this classic cucumber and tarragon salad. In Switzerland, we make it with sour cream and tarragon, while in France they cook the cucumbers slightly and then add crème fraîche and chives.

This salad goes perfectly with a grilled chicken breast or any white fish. It also goes perfectly with smoked or natural salmon, in which case you might want to replace the tarragon with fresh dill or dill seeds.

Lacquered Pork Tenderloin, Roast Potatoes & Ramson Recipe

Ramson and wild garlic leaves, as we call them in Switzerland, are in season, so now is the perfect time to make this recipe. The season doesn’t last long, so don’t tarry. If you don’t have ramson, or Allium ursinum,  in your area, try ramps or Allium tricoccum, which will produce a similar taste.

The sweetness of the lacquer and the tart acidity of the ramps give this recipe a lovely balance of opposing flavors. The roast potatoes serve as a neutral taste that makes the contrasts less shocking.

Today it’s all about green goodness in our diet. Yes, I mean green vegetables. We all know they are good for us, but why do some of us ignore them? Maybe, we just don’t like their taste, or they sound like diet food. In that case, we should try making them different ways than we usually do — something out of the box. Give them a new twist and explore a little. Who knows, they may surprise us.

Speaking of green vegetables, broccoli comes to my mind instantly. Its health benefits are several. But I know, it’s not an exciting vegetable for many of us. We have memories of eating bland steamed broccoli that we wished we could throw under the table. At times, it was topped with some plastic-like yellow cheese to make it more enticing. Even then it wasn’t very appealing. Since Mom insisted it was good for us, there wasn’t anyway to escape it except to wolf it down as fast as possible and forget about it until next time it showed up at the dinner table, staring at us.

Simple Sustenance: Healthy and Easy Bell Pepper, Garbanzo Bean, and Bulgur Salad

Healthy and easy might not sound very complicated, but I’m not talking about a cup of yogurt or a bowl of fruit. I am thinking of something hearty and flavorful with a farm-fresh bite. When the vegetable drawer in the fridge is begging for a visit to the produce market, it can become challenging to bring farm-fresh bite to the plate. This was the dilemma I was facing last night.

When I opened my fridge, I found just a couple bell peppers and a bunch of parsley were keeping each other company in the vegetable drawer. While I was wondering how to make the most of what was available, I found two slender carrots and a lemon hidden in a corner of the drawer.  I was hoping to come up with something that would satisfy my appetite. A look in the pantry to find some bulgur and a can of garbanzo beans completed the recipe — a well balanced meal of vegetables, whole grains, and protein. It seemed like another victory over a culinary battle!

Italian Blood Oranges are in Season and Reasonably Priced Now!

One of my favorite ways of creating tasty but healthy dishes is using fruit and vegetables as sauce. There are millions of ways to do this, depending mainly on the season.

Oranges are abundant at the moment, so I’ve been using a lot of orange juice to liven up dishes. It adds a burst of flavor, yet requires no cream or butter, thus making it low in calories and high in fiber.

The season is short for wild Italian asparagus, so take advantage of it in April and May.

Itsy Bitsy History of the Parsnip

In the Middle Ages, Geneva was running over with parsnips, which they referred to as “white carrots”. It was almost always included in their “eternal pots” of soup, which consisted of seasonal vegetables that they just kept adding more vegetables to as needed, and a piece of meat once a week.

After World War II, many root vegetables went out of fashion in Europe, because people had had to survive on them and nothing else during the war, so farmers eventually stopped growing them. The same went for pumpkin. People in the north of France who had lived through the war and eaten pumpkin every day couldn’t bear the thought of eating pumpkin ever again.

In recent years, these old-fashioned vegetables, including parsnips, have again become available, and chefs are going crazy with new ideas on how to use them.

Parsnips are plentiful at the moment and there’s nothing better than soup to warm you up on a cold winter’s day. Eric Burkel, former financial analyst, entrepreneur and now president of his local food coop in Paris, got this recipe from one of the farmers who supplies vegetables to the coop.

I’m having baked sweet potatoes for Thanksgiving!

Sweet potatoes are a traditional part of a American Thanksgiving dinner. Every family has its own favorite or traditional recipe. Here’s mine, in all its simplicity.

I love sweet potatoes for their natural flavor and texture, so I simply scrub them really well and bake them, with the peeling on, at 200° C / 400° F until they’re soft enough to eat.  The time depends on the time and variety of sweet potato. I then cut them crosswise into chunks (still leaving the peel), put them into a serving dish, and slather them with butter with sea salt, which I buy from my cheesemonger.

No marshmallows, no brown sugar, no maple syrup, just au nature.

It’s interesting to watch Europeans’ reactions to them. At first they’re puzzled, but on their second bite, they usually find them interesting and like them.

Note: If you peel them, they will dry out in the oven.

Savoring Fall

Fall is a perhaps the earthiest of seasons. Crisp air, fallen leaves, and trees changing hues make it a season to savor before winter sets in. For me, it’s a pleasant reminder of the holiday season ahead. But most of all, fall brings us an abundance of harvest.

The first thing that comes to my mind is pumpkin – the good old orange ball, greeting us at farm stands and grocery stores. Big, small, mini, round, and some not so round — they all whisper, “Take me home with you!”  How can you ignore these scrumptious beauties? Even though they are not the easiest of fruits to peel,  if you can win that battle, there are endless ways to enjoy them, sweet or savory.
